Chili = check!

Last night I was able to get the chili made for the party and in the freezer!

I love making chili on cold, Fall days. It makes the house smell fantastic and really gets your appetite ready for something warm and delicious!
My Mom always makes the best chili! As with most things she cooks, she doesn't use a recipe because she just "knows" how to cook. When I ask her how to make certain things, she usually has to pause to think about how she does it. I try really hard to imitate a lot of her famous dishes, sometimes I succeed, and other times that trash can gets full! However, her chili I finally have down pat, but with a few changes!

I hope you enjoy my basic chili recipe! I even tried to measure out the ingredients this time so that someday I can tell my daughter how to make it for her family!

What you need to start:

2 pounds ground beef
One can of Tomato Juice
One large can of chili beans
2 tomatoes (or one can of stewed tomatoes)
One onion
One jar chili powder

What to do:

Brown your ground beef and drain.
Slice your tomatoes into sixths and remove skin and seeds.
Chop your onion in large pieces.
Add all these ingredients to a large dutch oven or stockpot.

Add the beans, tomato juice and chili powder. Stir all together. Bring this to a boil and then cover, reduce heat and simmer for a minimum of two hours. While simmering, make sure you stir it on occasion to keep it from sticking to the bottom of the pot.
Easy peasy! Basic Chili!! Serve this chili up with some yummy corn bread and lots of shredded cheddar cheese! You could also eat it with a peanut butter sandwich (thought I would suggest this Julie!).

Some other things to add if desired (I left these out this time since this will be offered to children!):
A can of corn
Jalepenos
More chili powder
Tequila
